• Miso soup using Shiritaki noodles

    There’s no more relaxing than to make a warm soup when it’s cold and rainy outside.

    Heres comforting dish that you can enjoy during the rainy season traditional Japanese soup with low carb noodles (Shiritaki).

    WHAT YOU NEED

    2 (200g) Shiritaki Noodles


    (3 Servings) Instant Miso Soup (Paste)

    Nori (I use regular and wasabi flavored nori)

    2 Large Eggs (boiled)

    Petsay Baguio

    WHAT TO DO

    Boil 2 eggs

    Prepare the Noodles

    Rinse Shiritaki noodles for 3-5 minutes in running water

    Boil water add Shiritaki noodles and boil for 5 Minutes

    Drain

    Prepare Miso Soup

    Empty 3 servings of each package into pan add 480ml of hot water. Stir well. Boil for 2 mins then add Shiritaki noodles

    Add petchay baguio, Egg and Nori

    Serve and Enjoy.

  • Low carb Carbonara using Shiritaki noodles

     

    Low carb comfort food made easy

    WHAT YOU NEED

    Shiritaki Noodles / Konjac Noodles 2 Packs (200 grams per pack)

    4 stalks of celery chopped

    Sliced mushrooms 198g

    Crispy bacon for toppings

    1 box all purpose cream

    Olive oil 1 tbsp

    1 large Chicken breast diced

    Parmesan cheese

    4 tbsp grated cheddar cheese

    WHAT TO DO

    1. Place Chicken breast in a pot, pour in just enough water to cover allow to boil for 10 minutes
    2. Scoop out Chicken Breast and move to plate to cool
    3. When cool sliced chicken breast into small cubes
    4. Save chicken stock for later

    Meanwhile..

    • Cook bacon in a medium skillet over medium heat until crisp, about 6 minutes.
    • Transfer bacon to a plate lined with paper towels; chop in small pieces and set aside.

    Prepare the Noodles

    1. Rinse Shiritaki noodles for 3-5 minutes in running water
    2. Boil water add Shiritaki noodles and boil for 5 Minutes
    3. Drain and toss in 1 tbsp Olive oil

    Carbonara Sauce

    • Sauté mushroom in butter for 3 minutes in medium heat
    • Add 1 cup of chicken stock
    • Add 1 box all purpose cream
    • Add 2 tbsp grated cheese
    • Bring to boil until sauce thickens
    • Add chicken chunks

    Topped it with crispy bacon and parmesan cheese

    Now enjoy your creamy carbonara without guilt.

    Serve and enjoy.

     

  • August Rush

    Early mornings that doesn’t involve changing your oversized sleep shirt or loungewear into scrubs or work clothes is a definition of a relaxed weekend in my book.  Getting to wake up in tune with your natural clock and not having the alarm on snooze is setting your day to a great start. Enjoying a cup of coffee and protein filled breakfast that is unrushed typical of a laid back Saturday morning.

    In an article that I read about productivity, suggests to tackle the hardest chores in the beginning of the day and the do the enjoyable and easier tasks such as catching up on your readings, emails, blogs last. I still tend to finish my paperworks in the nick of time just before the deadline which is becoming a routine. I need to reprogram my mind to focus on more important thing that doesn’t involve watching “in my feelings video” challenges. Watching a 10 minute how to make up video wasn’t in my agenda, I guess I need to be more focused and get my priorities in order.

    August is my only son’s birthday month and we still haven’t started any preparations yet. He is on the spectrum and while he was non-verbal till he was four, he is a little bit chatty now. We are so grateful for the progress that he has made over the years. One of the social skill that he has been struggling is how to express his feelings. For his 8th birthday, he requested a trampoline party at the the game park. We are thrilled that my son is excited in the party idea. Last year he was not jolly at all.  He wasn’t enthusiastic to take part in the outdoor games for the superhero party we had in the backyard.  Like any kid that is into computer games, he likes to have a Roblox themed party. I don’t know if there will be a lot of  themed decorations or favors that will not cost a fortune in etsy or amazon. I thought for sure he would pick a lego party but I’m glad that he has developed his own personality. We are impressed that he can accomplish simple tasks such as taking his shoes off without help and big things such as adding grocery items in the cart (ha!)

  • Low Carb Bagnet Chicken Mami

    Chicken Mami or Chicken Noodle Soup is a delicious soup dish fit for any weather

    What you need

    Shiritaki Noodles / Konjac Noodles 2 Packs (200 grams per pack)

     1 Large Chicken breast

    6 chicken liver

    Salt, Pepper and 1 knorr Chicken cube

    2 Large Egg, Soy sauce and Olive Oil

    Bagnet (thinly sliced)

    Onion and Garlic

    Cabbage

    Baguio Beans

    What to do

    1. Place Chicken breast in a pot, pour in just enough water to cover allow to boil for 5 minutes, add Chicken liver and boil for 5 minutes
    2. Scoop out Chicken Breast and Chicken Liver and move to plate to cool
    3. When cool shred chicken breast and chop chicken liver

    Meanwhile..

    Deep fry thinly sliced Bagnet Ilocos set aside

    Prepare the Noodles

    1. Rinse Shiritaki noodles for 3-5 minutes in running water
    2. Boil water add Shiritaki noodles and boil for 5 Minutes
    3. Drain and toss in Olive oil

    Sauteed Vegetables

    1. Saute Garlic and onion add shredded Chicken breast and Chicken liver
    2. Add Cabbage and Baguio beans
    3. Season it with salt and pepper

    Broth

    1. Dissolve Chicken cube to leftover water (from the boiled chicken and chicken liver) taste and adjust seasoning (add salt, pepper and soy sauce)
    2. Add 2 Large eggs boil for 2 minutes
    3. Add oiled Shiritaki noodles
    4. Add sauteed vegetables and boil for 2-3 minutes

    Pour Low Carb Chicken Mami in bowl top it with chopped onion and Fried Bagnet

    Serve and enjoy
